Statement of Purpose: The purpose of this unit is to examine the body’s need for food and the effect of food on the body. This module includes the basic food groups, nutrients, and common therapeutic diets, as well as ways to assist a patient/resident to meet nutrition and hydration needs.

Performance Standards (Objectives):
Upon completion of two (2) hours of class plus homework assignments and six (6) hours of clinical experience, the learner will be able to:
- Define key terminology
- Discuss the body’s need for food and fluids
- List common nutrients and their food sources
- Describe the My Pyramid food guidance system
- Describe the vegan basic four food groups
- Discuss nutritional and fluid needs of the elderly
- Describe therapeutic diets commonly ordered for patients/residents and the responsibilities of the Nurse Assistant
- Describe proper techniques for feeding patients/residents
- Discuss cultural and religious influences on dietary practices
- Identify alternative ways to administer nutrition
